In road racing... just try to keep the car under control and keep it on track... if you go into the grass well then keep your cool and get back on. You'll notice that sometimes if a driver knows he's gone in too deep he will just keep going straight IF there is runoff or an access road.

In NASCAR... SLOWLY ease off the gas, ease up off the steering, and use enough brake to keep the car under control and let the car move on up the track (you are trying to maximize available grip to contribute to braking)... hopefully you'll have scrubbed enough speed to keep it off the wall.

On the street this is hard because you usually can't go off the road without encountering a curb or some other obstacle.
Yeah, I remember from my MSF course, that traction is a pie chart, where changes to the vehicle "eat" part of that pie chart. Basically, if you're cornering and this consumes 50% of your available traction, then you have up to 50% available for accelleration or braking.

From this, I gathered that coming in too hot, I'd straighten up and use 100% for braking, then turn.

I was going from the perspective that if you're coming into the corner too hot - say at 90% traction, and you let off, the car will use that remaining 10% just on engine braking....(examples, not hard numbers!) - you touch the brakes and you're screwed. If you're still too hot, you're kissing grass/wall/curb.
