But then when I checked the paint markings on the rotors, they all changed colors, indicating that the rotors exceeded 630°C.

And that was just after one short stint. So later when i drove, i was very gentle, all good...but now when I was going home on the highway, I feel a slight judder around 120km/h, and when I brake, the steering wheel shakes a bit.

Did i really manage to ruin completely new rotors in ONE stint? Or is it possible it's just brake pad deposit?

It sure sounds like it. I would suggest investing in some AP Racing brakes and calling it a day. They work very well.
