It was the ants, a bridge too far.
All that “exotic” meat is actually harder to prepare and cook right in order to be good, too difficult to consistently serve quality dishes plus one or two exotic offerings is a cool hook for customers. A menu built around them is a shtick and that gimmick will ware thin pretty quick.
