There are models w/o cruise control. OP location is The United Kingdom.

Best case scenario is that you can add the switch and wire it up to the clock spring. Worst case is the ECU isn't programmed to handle cruise control at all which basically means you can't. I'm guessing this is going to be a worst case scenario, but I can't say I've heard of anyone trying this on a 370Z. I'm pretty sure there is no easy solution for adding cruise control to the 350Z base models without it.
