Just got done frying zucchini for the mob. Cut the zuke into coins about a quarter inch thick. Dip in egg and then 4C breading. Fry in a quarter inch of olive oil until golden brown. Flip over and cook the other side. Remove and place on paper towels. Lighty sprinkle parmesan cheese on top.
The mob ate a 4 lb zucchini in minutes.
