Smelt dipping is pretty easy. dip net into water, scoop up net full of fish, toss in 55 gallon drum. Rinse, repeat until that barrel is full. The creeks and small rivers would be chocked full when they are running.
If you see them on a menu, try them out, you wont be disappointed. I love scallops, pan seared with butter and garlic, oh yeah, one of life's great little pleasures.
