It is far from impossible. Many have done it - myself included. Some replaced the AC AMP with a non-navi version and rewired as needed to get all the functionality working. The only thing you lose is the AC controls and factory navi related controls in the dash (duh). They operate on a dedicated data interface and dont have any primary use, so no other accessibility is lost.
I developed a custom interface to allow the non-navi AC controls to work with the Navi based AC system for a plug-n-play conversion.
Both options allow for any aftermarket stereo to be installed. I have not read about any failings with the non-navi AC AMP conversion, although its much more invasive. I have been running my custom solution for months without issues and will be sharing the github repo soon for those interested.
