I have seen them sell the fuel level sensor and temp sensor on ebay/ parts store. Has anyone ran these? Not sure if it is worth risking dropping 100 buck on one if I end up having to get the whole thing. Luckily it pretty simple to get out.

Did you do the voltage/resistance checks as shown in the FSM?
This will verify sensor issue or wire/harness/connection issue.
The type of temp sensor used (NTC thermistor) is VERY durable and generally don't fail.
If the fuel temp circuit is open (as in broken wire/loose connection) it will set a P0183 "An excessively high voltage from the sensor is sent to ECM" due to the voltage divider circuit on the ECU circuit board.
The link above shows the wrong part and does not have a fuel temp sensor. Just 2 wires for the variable resistor to indicate the fuel level.
The fuel temp sensor is *ONLY* on the fuel pump assembly as show below.
