FYI I'm about a 3 hrs. south of you in a '10 with the old coolant/oil setup. Ran 240* constantly on highway cruises in the summer. From what I've read in the past the temp gauge is also 30* colder than the peak oil temp in the engine due to the sensor location. In any event 240-270* is too high for my liking while cruising.

I went with a 25 row setrab with thermostatic plate. I had to cover 6 rows as I couldn't get temps over 160* during similar driving conditions! I typically see 180* now and haven't even sniffed 220* when pushing hard on the street. I run M1 5-20. The coolers can be had in the $250 range used, just make sure the engine didn't blow its guts into it as you'd contaminate your pristine engine with someone else's metal flakes.
