thats a solid steak plate for me. use the blood when you cut the steak for gravy. thats the mans way to do it

I make a quick pan sauce from the juice. Usually a little worchestire, grain mustard to thicken, and some wine.
As for sides. I fried eggplant last night so not really feeling anything more fried. I was thinking of roasting a head of Cauliflower and drizzling with hot sauce. Or boiling some pasta since I have leftover sauce from last night. Other final option is some button mushrooms and carmalize some onions.
