Flicr is being weird with uploads right now. This was a previous water bath for a Sirloin steak. 129F for 2 hours. Came out as medium rare. Put on cast iron and seared for 30 seconds per side with a large pat of butter being spooned over top with rosemary and thyme sprigs.
And this was the outcome. Just slightly medium with the whole cut looking that color. Wicked juicy throughout everything and with a good charred crust from the cast iron.
