Spark plugs are likely fine. Coolant is probably fine as well (if you choose to do it make sure you have the right tools - air is easily introduced into the system if you don't). I'm over 100K and only now considering them.

All the rest of that is good stuff. And easy for the most part. For any fluids, I would do a full drain and refill with fresh fluid (or at least remove as much old fluid as possible - ranger method might be easiest for PS fluid). If the brake fluid is pretty filthy, you might consider changing it more frequently. Trickiest item left on the list would be the AT fluid - you have to check the fill level with the fluid at a certain temp. There is plenty of info on the forum about it.
