I believe if you install this:

NISSAN 370Z 2010-2018 VIDEO IN MOTION

You'll get around the issue of navigation not letting you enter things while the car is moving AND the issue of the AUX display only working when you're parked.

(That's $200 ... but I gotta say I'm thinking about adding one for my car.)

My guess is, you could use one of these HDMI to RCA composite converters to get any HDMI audio and video converted to the inputs on our Z:

Once you can do THAT, you've got all sorts of options for connecting things up, including an in-car computer like a Mac Mini or Intel NUC PC -- although I really don't know how good any of that would look via an analog composite video output? The newer iPhones have a Lightning to HDMI adapter available though, so you could at least get one hooked up that way and run apps like Waze or Apple Maps.
