I just purchased some TP-Link AV1000 powerline adapters to replace those slower ones. Rather than spend $80+ on 2000 or even $60 on the 1200 speeds, I opted for the 1000Mpbs version that I caught on sale for $35 via Prime. I figured I'd test them out and could always upgrade down the road.

I doubt you would notice a difference between them. 1000Mbps is going to be fine for whatever you can toss at it in home enviroment.
We should probably note somewhere that these numbers are theoretical limits that the units should be capable of, not consistent throughput.
