During the offseason (~Nov.-Apr. here) I bring my race tires inside and store them in my spare bedroom or an empty closet. In either case the tires stay out of the cold and generally don't see much if any light. I use the covers like in the previous post to keep any brake dust, etc. off the floor.

Some fellow racers in my area who also happen to work as engineers for a major tire manufacturer just keep their extra/spare race tires in their basements in a dark room where the temperature is "mild" (~60-70°F). If that's good enough for them then it should work for you.
