At Franklin's I tell people that have never been to at least try a very small bit of everything if they really want. But focus on the brisket - no reason to fill up on turkey or sausage. I usually get at least a few pounds of brisket just for myself. Even as leftovers it's still better than many places.
I have never been to San Antonio but I love Rudy's dry rub and if I use BBQ sauce Stubbs is pretty good out of the bottle.
