Dash cams are readily available today and dirt cheap. I think there's already several threads on the topic, just use the search. I have the mobius action cam installed (think it's time to readjust the focus on it too). You never know what you're going to encounter and it could truly help your case some day. Gopro is overkill and overpriced IMO.
You can use whatever software comes with it to edit/combine clips. I use
Registrator Viewer to assemble/edit/cut the clips.
