Wow 6'4" in a 370z. I am shade over 6' and I can't imagine fitting into it being much taller. Kudos to you.

I regards to the mirrors/blind spots, thats a typical comment from a new owner. I used to feel the same way. It can be adjusted out, and theres no problem with the mirrors. No one really swaps them out, unless you're putting together show car or something.

Here is the quote we all usually go by to adjust our mirrors to eliminate the blind spot:

It does take getting used to, but you will find, if you let a car pass you on either side, it will go from the rear view mirror, to the side to where you can see it directly and never be out of your sight."
I agree with you, in regards to the driveline. I've had mounts/inserts etc on previous vehicles with great results, including a track prepped Honda Civic, a WRX, and even a Jeep. The good news is the 370z does have tremendous aftermarket support, including motor mounts, and the popular tranny mount. Z1 is a great co to support: https://www.z1motorsports.com/

You'll find many of us do a few subtle tweaks, and enjoy the car primarily as-is. The minority do major mods such as TT kits etc. The car is a great package from the factory.
