How wide and tall of a tire can I safely get on there? I have to drive 50 minute to and then 50 minutes from the track with them on.

Thanks in advance

Driving that far too & from the track...i'd bout only rely on Mickey Thompson Drag Radials.
The 19" choice is very slim (1) 27.90" tall
This will reduce your hole-shot,unless you have lower gears.
Should clear fine & tuck well underneath fender/ & i'm guessing you have already installed rear camber arms;to stand them upright?
Not sure how big your brakes are; but better selection in 18" & down.
