the car runs too 'cold' when driven normally, it will never go over 90degC, hardly reachs 80degC while water is around 90 deg all the time. It probably will be even worse if I remove the stock sandwich "heater" haha (I dont think it should be considered as a cooler)

Runs coolant through it which may be Warmer than what the oil cooler is bring in this increasing that temp. Don't believe me? Call tony at fast intentions and I told u so.
