Replace outlet fitting on the oil sandwich, install with a tee to have 2 ports available.

You could replace both fittings but im not sure if the return side from the cooler will have enough pressure to be accurate still. That and the v2's have Thermostatic plates.

Theres also oil drain plugs with 1/8npt for temp gauges.

but yeah tapping the pan spacer for the temp and run your setup for pressure seems like the most accurate way.

Problem with that fitting, in addition to what Sasha mentioned, is most oil temp probes are to long to screw into it.
