They have done a pretty poor job letting the audience know how much time has passed between episodes/seasons. They never really show the group dealing with winter so unless one of the characters mentions it one could end up assuming everything is taking place within the same year.

As for the environment around them I can only assume that they don't think it's worth the money to do it. They're filming in places that probably see some sort of everyday traffic so letting it all go to hell naturally isn't going to happen and they probably assume the average viewer isn't going to pay that much attention to trees and grass.
