When apple season is here, these delicious little individual pies are a must to make. They keep well in the freezer.

Ingredients
DOUGH
2 c flour
1 tsp. salt
1 c shortening
⅓ c cold water
FILLING
8 to 12 medium sized tart baking apples-cored and peeled
8 tsp. of butter
8 heaping T of cinnamon, sugar, flour mix (Mixture is 9T sugar, 3T flour, 1 T cinnamon)
8 tsp. brown sugar
Instructions
Mix together the dough-first four ingredients. Mix together the sugar mixture for filling-9T sugar with 3 T of flour and 1 T cinnamon in a bowl. (don’t need to be exact-more is better) Roll out a piece of dough to a 7 inch round. Place the cored and peeled apple in the center of the dough, hole side up. Now put 1 tsp. of brown sugar and 1 tsp of butter into the hole where the core was. After this, sprinkle 1 big heaping T of the sugar-flour mixture into hole and outside of apple. Pull the sides of the dough up and around the apple and pinch closed at the top. Sometimes you need to use a little water on your fingers to make the dough stick closed. Now if you want to decorated the top with a leaf of extra dough you can. Place into a 13×9 baking dish. When you have all 8 apple dumplings in the dish, put into the preheated oven @ 350F for 55 to 60 min. until the apples are baked soft. Check with a fork.
