Penskes and Konis (especially their high end stuff like the 28s) are superb.
The main thing to consider as you get that high end, is forming a relationship with a shock builder/tuner. What makes those shocks great, is their flexibility to do just about anything a shock can do. But to get them there requires solid input to the build and valving process, which is made all the smoother by someone experienced in the field. Unless you know exactly what you want (rare) the good builder will take your input on how you want the car to handle, and build a set of shocks that get it there.
You can still hose yourself with adjustments but again the tuner can help figure that part out too...
