ive done di-noc on friend's cars that wanted that carbon fibre look, but would recommend using uv-coated vinyl for gloss black top.
so di-noc for carbon / brush alum / wood / etc, because its thicker and will hold the pattern and uv-coated vinyl for solid colors.
dry application for di-noc is doable, as kenchan mentioned, but i'd advise to use some soapy water for first timers...and lots of soapy water for vinyls (roof as well as both sides of the vinyl, so you can tell which parts have been squeegeed down).
