performance wise its a toss up some times the ceramic's make slightly more most of the time it's negligible. the 300 series stainles is the way to go if you want them to last a long time, way more durable than mild steel or even 400 series stainless ceramic coated headers. over time the coating cracks and the headers rust from the inside out. 304 or 316 stainless is the way to go for durability.
