I had a 350Z (Enthusiast) back in '11 that I trade for my first 370Z (Sport/Touring). As far as just "cruising" the difference is definitely not "blow me away" especially if you have the '07/'08 but there is some difference. I don't really think the clutch feels any different, nor does the transmission really. The steering is a bit more sporty feeling. Versus an '03, the 350Z will have more power (torque) on the low end and a lot less on the top end.

If you've had the leather, heated seats, etc. and use them and would miss them, I'd wait for a touring. Sport/touring MT is not hard to find in about any color you want. The base 370Z interior is nicer than the 350Z base interior, but the Touring is a whole different thing.

Anyway, I bought mine because it was improved and I thought I wanted all of the interior upgrades and features of the Touring (nicer stereo, heated power seats, etc) but then I realized I didn't use any of that stuff anyway and I bought a NISMO.

It's all in what you want, but it sounds to me like you enjoy the creature comforts, hold out for a Touring/Sport or even just a Touring if you don't care about SRM or the bigger brakes and wheels.
