Stock oil temp gauge is fine, very accurate.
Stock water temp line gauge is a POS. It will sit in the middle on a wide range of temp and then run up quickly.

The reason people replace the oil temp gauge is because they are usually replacing the clock, and the triple gauge cluster in the 370z is a single unit so if you want one gone you need to do all 3 at once.
