I'm going through the same research right now. I'll just share what I've found
Coil overs- If you don't track your car, you're probably going to be fine with just springs. They will do the job and lower the car an inch or two. For me, I'm not tracking the car. But, at the same time I kinda pride myself on doin things right and going above and beyond and getting more than I need for the car. I realize it's more than I need but I'm going with coil overs. As far as which ones.....that's subjective. I'm finding for people who just want to lower the car and have a good ride, Stance SS are one of the most popular. For more serious guys and track racers KW v3's.
Height- I live in Chicagoland, so if I want to go lower than a couple inches I'll be scraping and having problems. So if I go lower than that, I'm going to look into air motion cups to raise it up when I drive
Don't forget camber and toe! You'll need at least a rear camber kit, and depending on how low you go, you may need rear toe kit and front upper control arm.
