Trade secret- the biscuits by themselves are nothing special. It's the repeated bastings of butter (flavor) and salt. And I was never sure exactly what kind of meat was in the dirty rice. It was shipped in pouches marked "Cajun Meat".
I know Cajuns. I've eaten their food. It's always fantastic but you do not, ever, ask what kind of meat it is.
