If I had a source for good fish to smoke, I'd be all over that. I'll give it a shot, but the saltwater stuff is all I can get reasonably fresh. Once it's 80 degrees out, I'll have about ten pounds of bacon, a lot of cheese, some garlic and jalapenos going in for a solid 12+ hour cold smoke over pecan and oak from bourbon barrels.
