Perfect! Will try this out. I do use my rubs on lots of other veggies. And I hear you on kinda mushy, not total mush but I like the flesh of the zuke soft.
The fried zuke rounds are about 1/4 slices and get a nice tempora type batter and fried until the centers are just soft
