Can your independent shop verify that all damaged parts were replaced? Will they know what to look for on a 370Z? Has the shop even had a 370Z on their rack before?

Unless you have the resources to replace major parts in the future (doesn't sound as if you do), I'd run from any salvage titled vehicle.
