There's not enough power for the hair dryer, and the fan doesn't spin at high speed which causes the heating coil to overheat.
The way I was taught was to think of electric current as a liquid (the water analogy). Voltage is water pressure, amps is the flow rate and ohms the resistance/pipe size.

I'd be carefull plugging a hair dryer though, since units like that usually have a maximum continuous output. I'm guessing around 120 watts.
