To OP: On a quarter mile run using a 6 spd M, can you give me a low down on where the "correct" shift points are on the different gears. I keep getting answers from shift to second at 3500 RPM, shift at redline for every gear, etc. Maybe it is a completely individual thing and tied to your specific car/style. but I have to believe there is some consensus on the stock gearing of the 370Z that there ideal shift points at certain RPM's. I have only owned this car for 1 week so still sort of learning it and have not been to the track at all.
Also, I never see anyone that seems to use > 275 mm tires on the rear of the Z. I bought mine with 285's on it. The foose wheels that are on it are I think actually for a mustang. Is there much difference?
I too am looking at putting some trackable 18's on my car. I feel the 19" foose's are mainly a show tire. Can someone recommend me a good 18" setup/brand purely for track. I'm pretty decent with tires, but I fail @ wheels.

He's using a base auto, the cars make almost all their power up top, no reason to short shift it. 275's are recommended because he is wearing 18" rims. 285's are more common with 19's. Better rubber will definitely help.
Regarding your shift points, try a 3500rpm launch and just redline each gear. Turn off VDC.
If you have a sport package, they should be Rays, I could curb stomp someone if it were not the case unless they are replaced with an equivalent wheel.
