Remote start alarms (or stand-alones) have timers that are programmable to dictate how long they will run. Most people will set them to 10-15mins.

Pressing the foot brake or any other failsafe you wire in would kill the car without inserting your key (or getting in the car with your fob in this case.) I'd recommend wiring in a parking brake requirement and a clutch shutdown on 6MTs.

No reputable shop should install a remote start on a customer's car, unless things have changed with the fact that you can now accurately monitor which gear the car is or isn't in. I've seen installs in the past using a grounding system of springs where when they make contact with the shifter it disables the remote start. I did a side job for someone many years ago on a manual transmission and all was well for about a year. The kid dropped his car off at a dealer for a recall on his dash (it was a ford where the dash was peeling up from its frame) and he attempted to start the car. It jumped into the side of the building as the tech had left it in gear, good times.

I love the fact that your guy at Infiniti stated that the remote start works with the factory keyfob, I'd be interested to see how that works. I'm assuming the factory alarm module has some unused outputs. Take for instance that most Infinitis and higher end Nissans have been able to roll down their windows by holding the "Unlock" button on their fobs for a while.
