Default A few easy questions

I just installed the gold series stillen oil cooler.
Questions: 1. It takes 25 minutes driving the car under 3000 rpm (I read this was a must until the oil temp reached 180) when ambient temps here are 70 degrees to reach an oil temp of 180 degrees. Is it accurate that I can't drive the car harder until oil temp reaches 180 degrees? 2. Would you guys still recommend adjusting the fan cycle to turn on at lower temps? 3. Does disconnecting the battery return ecu to stock or does the base uprev still stick around? I added an exhaust and I want to reset the ecu. Thanks
