That is the general problem with properly-adjusted mirrors on the Z. Basically, you can see one lane over in either direction fine, but there's blindspots further out for cars that are two lanes away (e.g. the guy trying to merge into the same lane as you from slightly behind, in your pic).
I still use the properly-adjusted mirror setup though. Every setup has its disadvantages (the ones that achieve a really full view also tend to distort and/or miniaturize everything). You just have to be conscious of the two-lanes-over problem, and work on your situational awareness.
As Spohn noted earlier in this thread, driving faster helps a lot because then with the rare exception of other fast drivers, everything that might be in a blind spot slightly to the rear is something you just recently saw ahead of yourself, and you already know where they are and what they're doing in your mental map of the road.
