First, you are right, the water temperature meter gauge is NOT linear. Notice that the final dot ( near the middle ) where the temp lit up is when engine temp>= 158F.
The larger radiator does help the oil temp. This is most noticeable when you program the fan so that it turns on sooner than the factory setting at 213F ( I did it at 195F ). It lowers the oil temp down to 5F less than before.
With all of that said, I still recommend a 25 row oil cooler or better since this VVEL engine is running brutally hot and a larger radiator simply will NOT be sufficient to bring the oil temp down to the level that I wanted.
