You really want oil-temps to hit 85 Celcius or more (say 185 or so) to make sure that any moisture contamination is boiled-off.
The risk with over cooled oil is that contaminants (bascially water vapours that condense inside the engine as it cools - overnight) build up and dilute the oil.
If you don; wish to fit an oil thermostat bypass (these are usually set at 180) then saddle up to more frequent oil changes. The more short runs you do, the more frequent the o/c needs to be.
