Default How cold is too cold? (oil cooler related)

I just pieced together my own 25 row oil cooler WITH thermostatic plate, my oil temps now are barely hitting 180, and it takes a decent amount of time for it to get off the 140 mark...

If lets say I usually hover at 150-160, is this too cold?

Edit: I DD the car mainly in Dallas, but for the next month I'll be in Southern CA
