1. For the flattest torque, shift between 5000 and 5500rpm
To get the most out of the engine 6500-7200rpm. You gotta feel it though. The shift rpm's change depending on the throttle input but that's the general area.
2. Yeah, dropping two gears will get you going. If. You are in 6th, drop to 4. If you are driving aggressive? Never be in 7. And if you want be in the median sweet spot for up and down shift, stay between 4 and 5 depending on speed. 1st gear does very little and 7th is useless for fun 2 through 6 is the power gears.

The rest you can't get from everyone else.
