Miata is going to be a better and cheaper track car. It's been used in motorsports for years and aftermarket is awesome and well proven. 370z not so much.

Without a cage getting just under 3000 lbs is pretty easy. Lightweight wheels and lighter dot r tires, aluminum hat brake rotors, lightweight flywheel and clutch, aluminum body Coilovers with small springs, lightweight long tube headers and exhuast system, lightweight race seats, lightweight battery, racing steering wheel, remove all engine dressing, CF hood, remove stereo and speakers, lose spare and all associated stuff in the back, replace stock mirrors with lightweight race mirrors, Lightweight engine pullies and belts everywhere, hollow swaybars, use titanium harness bar to replace stock beam behind the seats, replacing steel nuts, bolts, brackets on non load bearing with titanium or aluminum, lightweight intakes.

More radical weight removal would include stripping interior and doors, doing CF rear deck with poly window, poly side windows, cf fenders, remove AC, lightweight radiator, get a racing alternator, remove heater core and all plumbing, strip all undercoating and sealer, remove plastic fender liners, composite fuel cell, remove all sound deadening material, CF doors, replace projection beam headlight buckets etc with lightweight LED headlights, remove crash bars (not advisable), I'm sure theres more.

I have seen a 2650 lb 370z with full cage.
