That's wheel hop, which is due largely to flex in the rear suspension. To quell NVH soft bushings are used which are great for keeping noises and vibrations out of the cabin, however they are pliable and cause some flex. This will cause components to load and unload quickly which leads to the tire gripping then losing traction and then gripping again.
Tire compound and temperature can also play a role.
