It always seems the rev holds for a second then drops slowly after I release the gas pedal. I have a g35 coupe as well, the throttle response seems lot faster on the VQ35DE engine.

On another note, when I shift from the first gear to the second after the car gets going and if I release the clutch a little faster the car shakes. It doesn't happen when I shift to 3rd or 4th gear. Is it normal? I am still new to the stick shift. If it's because of my poor skill please bear with me! Lol.
Yeah, i agree... it seems the VQ35DE is more linear in its response and revs faster.
A heavy flywheel and no camshafts might give you slower throttle response in the 370z,
