well i usually shoot RAW. this allows for the most adjustment imo. if you'd like to set a custom WB there's an easy way. cut a styrofoam cup in half vertically and stick the bottom end over the lens of your camera so it acts like a lens cap. aim for something that gives you about 50% shadow and 50% light (the dark side of a building usually works if shooting up towards the sky). go to your menu and hit custom white balance then go to that picture and hit "OK". i did this in savannah a few years ago and it worked like a champ!
