all it comes down to is money... do you have 12,000 for the initial build and do you have 10,000 if your motor blows? You should have 20k of money that wouldnt hurt you to spend if you go the F/I route on your 370z...

What I may do is buy my brothers 350z for 7k (03 Grand Touring) (just take over his payments, that what he owes) and start a build on that car while enjoying my N/A 370... You can pick up turbo kits or SCers for cheap on the 350 boards.... IMO the 370z is too new and a good NA car and I wouldnt want to risk needing a 10k motor if it blows... vq35DE's can be had for 800 and I can build it and drop the motor in , than buy a turbo kit and build a 350 for a fraction of the cost.. Still making really good power...
Building a DE is really not all that much cheaper to build than a 370z for the bottom end.Now if you start building the head of a DE with cam's valve springs it can easily become way more.I agree that the 370z is to new when you start talking about finding a spare motor to build on the side.

In the end you can build a VHR short block around the same price as a VQDE
