just imagine you drive saturday morning to L.A. to change your exhaust system. you drive back after some hours in the same weather conditions and the same speed.............. but your oil temp is now arround 250 and was 210 some hours ago. thats what happend to me.
In terms of high speed runs and sustained higher rpms, 250 degrees actually is pretty normal. 210 seems low to me, especially since you don't have an oil cooler and run at full throttle on the highway for long time periods.
