If you want to do a self-install on these, it really depends on your experience level, the tools you have available, the friends you have available, etc. I don't think anyone would call it easy. For reference I think the standard shop hours quote for swapping out the stock manifolds on our cars is ~7hrs.
I did it with two friends and it took us two days (there was some beer drinking the night between). We had a lift to work on as well, I really wouldn't recommend attempting the headers without a lift, or at least some kind of plan to get the car a few feet up in the air for easier underside access.
The major break-your-will PITA part of doing headers on our cars is reaching the 6 nuts on each side that hold the manifolds on, especially the driver's side. They're way up in there, and there's a lot of blockage in the way. Bring plenty of socket drive extensions, swivel joints, etc (preferably in 3/8, a little easier to reach into there with skinnier stuff). Plan to spend a fair amount of time scratching your head and trying to dream up new creative paths to reach the bolts from different angles. Then you've gotta get those same 12 nuts torqued back down properly afterwards too.
