I think the 370Z has the potential to be an excellent track car. Aside from the cooling issues with the oil and diff temp it has proven to be an excellent car so far. I don't have any personal experiences with the specific cars you have listed above, but I do have track experience in many different types of cars and I can say that bang for your buck, the 370Z is one of the best I have driven. They are a big step up from the 350Z for sure. I have driven E46 M3s on the street a bunch and although I have never driven one on the track if I were to guess I would say that the 370Z would be a bit faster around a road course stock for stock than the E46 M3. Cayman and Elise/Exige I have never driven period.
